Homemade Pumpkin Bars

These homemade pumpkin bars are so delicious and make the perfect as a holiday treat. These bars are pretty easy to make and super yummy!

Ingredients:

  1. 2 cups pumpkin (I use homegrown)
  2. 2 cups flour
  3. 1 cup vegetable oil
  4. 4 eggs
  5. 1 heaping teaspoon baking soda
  6. 1 heaping teaspoon baking powder
  7. Dash of salt
  8. 2 teaspoons cinnamon
  9. 1/4 teaspoon nutmeg
  10. 1/4 teaspoon cloves
  11. 1/4 teaspoon ginger

For the Frosting:

  1. 8 ounces cream cheese
  2. 1/2 cup butter
  3. 1 tablespoon cream
  4. 1 tablespoon sugar

Instructions:

  1. In large bowl combine pumpkin, oil, eggs and sugar. Beat. Set aside.
  2. In a separate large bowl combine flour, baking soda, baking powder, and all spices. Stir.
  3. Add dry ingredients to wet ingredients slowly. Mixing as you go.
  4. Combine all ingredients until smooth and then pour into a prepped greased and floured 17 1/2-by-11 jelly roll pan.
  5. Bake at 350 Degrees for 30 minutes Or until tests done in center. Remove from oven and allow to cool.

Frosting:

  1. Combine cream cheese and butter. Mix with a high speed mixer.
  2. Slowly add in powdered sugar.
  3. Add in vanilla.
  4. Add in cream to desired consistency for frosting.
  5. Frost the bars when they are cool and enjoy!
